In the production of rum, it is of utmost importance to assure the final product quality. This requires proper control over the process of fermenting and distilling of molasses and sugar cane juice.

  • Clarification of molasses: The refractometer is used for measuring and controlling the dilution operations in the pretreatment of molasses. The Brix measurement by the refractometer ensures that the exact sugar level of the molasses is fed to the fermenter for a smooth fermenting process and a high-quality product.
  • Fermentation: The refractometer can be used to follow the changes in concentration of fermented juice and determine the end point (see also application note Alcoholic Fermentation).
