How to control the fermentation process using in-line Brix concentration measurement

with Vaisala Polaris Sanitary Refractometer. This measurement allows to:

  • monitor the Brix which indicates the conversion rate, the degree of fermentation and the alcohol volume (%) in the production of alcoholic beverages
  • ensure the target alcohol level is achieved and upsets in the fermentation process are prevented
  • estimate alcohol content and determine when the batch is ready
  • monitor in real time the quality of the final product in the bottling line

Vaisala Polaris Refractometer can be easily calibrated to show any concentration unit preferred by a customer, e.g. Plato, Oechsle, Baume.
