Milk can be preserved as an unsweetened condensed milk, sweetened condensed milk or powdered milk. In order to assure smooth and safe milk processing, reliable in-line quality and process control with continuous Brix, total solids (TS) or total dry solids (TDS) must be implemented.
Before milk is evaporated, it goes through the stages of standardization (fat and dry ingredients compliance with requirements), heat treatment (to destroy microorganisms and prolong shelf life) and stabilization. Afterwards, the milk is ready for evaporation to obtain a certain concentration of dry solids. This stage is critical as it affects subsequent operations and the final quality of the product.
