Clarification and purification of the sweetener syrup is usually performed by passing the syrup through activated carbon beads. This processing step removes colors, odoriferous and flavoring material affecting product shelf life. After treatment, the carbon beads become saturated and for reactivation, the beds are rinsed off. This operation is often referred to as sweetening off.
