In-line control of egg separation process

Egg is a highly nutritious product with a wide use in various foods preparation. Egg can be industrially processed into different egg products, such as egg  white, egg yolk, whole egg and several mixes, e.g. by adding sugar or salt. Liquid egg can be packed as such or dried to egg powder. 

Dry solids control in egg white and yolk processing 

First, eggs go to a cracker or separator where undesired particles are removed form the egg. Then, if wished so, the egg is mixed with other additives. Next, the mixture will continue to pasteurization, and afterwards, the product is stored in product tanks and further packed. If necessary, egg yolk can be added to get desired dry solids content of the product.
