Cane sugar affination

The first stage of processing the raw sugar is affination, a process where warm, heavy affination syrup removes the outer layer of residue molasses from the sugar crystals. Then the sugar crystals are separated from the syrup in centrifuges and washed. After centrifuge, the sugar crystals are dissolved in hot water in the melter and diluted to a 54 Brix solution and then it moves to clarification and decolorization.
