Beet sugar roots contain a high concentration of sucrose and are commercially grown for sugar production in temperate climates (Europe and North America). Sugar beets are harvested in mid-to-late autumn when sugar content peaks and then processed into liquid and crystal sugar. Typically the sugar mills operate from harvest time until the beets have been processed. Sugar produced from sugar beets is second only to sugar cane as the major source of the world's annual sugar.
