Does the moisture in oil sensor need to be programmed or calibrated for each specific oil or fluid?

No. Since the sensor directly measures water activity (aw), an indication of the saturation level of the oil, the instrument doesn’t need to be calibrated with any oil specific parameters.  Each sensor comes calibrated from Vaisala with a NIST traceable certificate included.
