In the oxygen absorption spectra there are many different absorption peaks with different absorption strengths. Does it make a difference at which O2 peak the instrument is operating?

No. Each SPECTRACAP® sensor has been calibrated to operate at one of the oxygen absorption peaks within the 760nm absorption band and is locked to that peak while operational. The measurement algorithm contains specific features to assure that the correct peak is found at power-up and maintained during operation.
