Ripening and storage

Fruit and vegetable are stored and ripened in specially built rooms that have systems for controlling humidity, CO2 concentration, as well as product temperature. CO2 must be monitored to determine the level of ventilation, since high CO2 levels can preserve the fruits in storage, but also retard the ripening in ripening rooms. High CO2 level is also a potential health risk for workers.
